Default White Choc Celebration Cake

Made this yesterday / today as a practice run for my son's birthday.....

Decorated with Choc roses, Choc coated strawberries and Choc curls I made myself. First time I have made Choc clay (Chocolate and Golden Syrup) to do the roses - is fiddly but I think they look good and it is all edible of course

Cake:

I used a 28 inch springform pan

300g white chocolate
200g butter
250ml milk
2 teaspoons vanilla bean paste (vanilla extract)
2 large eggs lightly beaten
100g self-raising flour
150g plain flour

White Choc Ganache
200g white choc
88ml double cream

Preheat oven to 160 degrees Centigrade

Grease and line the pan.

Melt choc, butter, sugar and milk in a large pan over a low heat, remove from heat when completely melted and stir until completely smooth. Allow to cool to room temp for approx 15 mins.

add vanilla and eggs to choc mix and stir to combine.

Sift flours into large bowl. Add one cup of choc mixture and mix to form a smooth paste. Add remaining choc mix a cup at a time and mix thoroughly before adding more - this avoids lumps.

Pour into cake pan.

Bake for 1 hour 10 mins, check cake is cooked by putting sharp knife into centre which should come out clean.

Once fully cooked remove from oven and cool in pan. The cake can be iced as soon as cold or stored and iced on the day of serving.

Ganache.
Melt white choc in small pan or microwave.

Remove from heat, stir in cream and allow to set slightly in refrigerator for about 10 - 20 mins before putting onto cake.

I cut cake in half and put icing in middle and on top - cake is very moist so you can just ice top if you want!

Decorate....

All kids are looking forward to eating - I seem to have acquired some additional ones that are hanging around today - wonder why???

Lau where is the measurements for the sugar, is self raising flour is suppose to be sugar, I'm trying to bake it. Need cheering up.
