I cook my sausages, in gravy or sauce in the oven with a lid on, they dont go all rubbery and taste really good. However in Germany we cant get normal sausages we can only get bratworst which are highly spicy and split even in sauce.
a tip my mil gave was to blanch the sausage in water first then give them a quck blast in a fry pan , drain the oil off and then cook in the oven, dont split and reamin nice and firm.
